Dining the Malay way
Malay cuisine is rich and spicy arising from the use of hard spices and a wet spice mixture of rempah and coconut milk. Malay cuisine varies from region to region. Kelantanese cuisine, akin to Thai cooking for example, has a sweetish taste due to liberal use of coconut milk and sugar in cooking. On the other hand, the cuisine of Kedah is spicier due to the influence of Indians who arrived there centuries ago during the spice trade.
During a typical Malay meal, dishes are shared by all the diners. Rice is the main stay in Malay meal and is usually eaten with meat and vegetable dishes, curries and sauces such as sambal or sambal belacan (belachan). Customarily eaten with the right hand, Malay diners scoop their meal onto their fingers and then push the food with the back of their thumbs into their mouth. A bit like using chop sticks for the first time, it is not as simple as it looks - but you can ask our wait staff for a quick demonstration if you need some help.
For the adventurous, there is a variety of delicious Malay dishes to tantalise the taste buds. A favourite with Malaysians is nasi lemak, rice cooked in coconut milk served with anchovies, eggs, cucumber and sambal (chilli paste) often served with crispy chicken. Of course a Malay banquet would not be complete without our ever popular satay, skewered chicken, lamb or beef marinated in spices, then grilled over charcoal fire. It is served with a special peanut sauce, rice cubes (ketupat), cucumber and onions.
